When Irish Eyes Are… Bigger Than Your Belly!

Here’s Ann with all the gen on the recent State Banquets…



Michael D. Higgins, President of Ireland, had a couple of grand banquets on his recent State Visit. 

At Buckingham Palace he was served halibut with leeks and herb sauce, Windsor Estate beef with wild mushrooms and watercress puree, purple sprouting broccoli with hollandaise and baked onions stuffed with parmesan and bulgur wheat. Dessert was an ice cream bombe.

The next day he was entertained by the City of London at the Guildhall, with, I think, an even more impressive menu. 


Here it is, just in case you want to impress your friends over Easter – it will make a change from chocolate eggs.






SMOKED TROUT TIMBALE
A delicate mousseline of lightly smoked rainbow trout
presented with a spring salsa of watercress, orange, young tomatoes and Dublin Bay prawns

SPRING RABBIT AND DATE RAVIOLI
Dorset rabbit meat slowly braised combined with the sweetness of dates in a handmade fresh
pasta shell on a bed of baby spinach leaves, finished with a tangy sage butter sauce

SALT MARSH LAMB
Salt marsh lamb from the Gower Peninsula, prepared, cooked and served in two different ways
Rosemary reduction
Crushed new potatoes

CHOCOLATE BREAD AND BUTTER PUDDING
A classic English dessert in harmony with Irish Whiskey ice cream and garnished with a London ‘Shard’ of sugar work

And coffee was served with a choice of port, Armagnac, or Bushmills Irish Whiskey
